  • 3 large bananas mashed 

  • 1 cup almond meal 

  • 3/4 cup coconut flour 

  • 1 tsp vanilla essence 

  • 1 tbsp baking powder 

  • 4 eggs, lightly beaten 

  • ¼ cup melted coconut ghee*

  • 3 tbsp desiccated coconut 

  • 3 tbsp walnuts, chopped 

  • 2 tsp cinnamon 

  • 1 tsp nutmeg


  1. Preheat oven to 180 degrees celsius. Line baking paper around a loaf tin.

  2. In the first bowl, combine your wet ingredients, mashed banana, vanilla essence, eggs, and ghee.

  3. Mix the dry ingredients into another bowl, coconut flour, almond meal, baking powder, cinnamon, nutmeg, coconut, and chopped walnuts.

  4. Mix the dry and wet ingredients so they are combined fully. 

  5. Evenly spoon the mixture into the loaf tin.

  6. After pouring all the mixture scatter some additional walnuts and shredded coconut. 

  7. Place the tin into the oven and bake for approximately 1 hour.

  8. Use a skewer to check if the muffins are ready.  Remove from the oven and let sit for 15 minutes before serving.

  • this can be replaced with butter or regular ghee or coconut oil
