Chocolate and banana make a perfect combination. Both delicious and decadent… this banana loaf is a great snack and sweet healthy treat for morning or afternoon tea. Add some butter, grab a cup of tea, invite a friend over and enjoy it!

  • 3 bananas mashed

  • 1 cup almond meal

  • 1 cup spelt flour

  • 1 tsp vanilla essence

  • 1 tbsp baking powder

  • 2 eggs, lightly beaten

  • 2 tbsp melted coconut oil

  • 3 tbsp shredded coconut

  • 3 tbsp walnuts, chopped

  • 5 large dates, without pits and soaked in ½ cup hot water

  • 2 tsp cinnamon

  • 2 tbsps dark chocolate (I use 90% lindt dark chocolate)


  1. Preheat oven to 180 degrees celsius.

  2. Line baking paper around a loaf tin.

  3. In the first bowl, combine your wet ingredients, the mashed banana, vanilla essence, eggs, dates, some of the water from the dates and coconut oil.

  4. Mix the dry ingredients into another bowl, spelt flour, almond meal, baking powder, cinnamon, shredded coconut, dark chocolate  and chopped walnuts.

  5. Mix the dry and wet ingredients so they are combined fully.

  6. Evenly spoon the mixture into the loaf tin.

  7. After pouring all the mixture scatter some additional walnuts and shredded coconut.

  8. Place the tin into the oven and bake for approximately 1 hour.

  9. Use a skewer to check if the muffins are ready.  Remove from the oven and let sit for 15 minutes before serving with butter and a cup of tea!
